Can someone walk me thru the order process, from when the order is placed and payment approved (PayPal/Stripe) to the vendor/supplier/Manufacturer/seller receiving notice of the order?

I don't think that is necessary. Here is my situation, we are building a store that will have a variety of different products from a number of vendors. We are not stocking anything and the vendors/sellers will handle their inventory and shipping themselves directly to the customer. This is a drop shipping model.
My basic question is: how do the sellers get notified when an order has been placed and paid for their product? They need this to know to ship the product and to advise us so we can pay them for the product.

As soon as the order comes into the system, all the vendors in the order get an email for the product and quantity to be shipped and customer details. They can then ship the order and update the shipping, tracking details in the system from the seller central order section.

They will also see the transaction and the balance which you own them after deducting the commission etc, they can then place the withdrawal request. you can update the withdrawal transaction number while approving the request.

This entire withdrawal process can also happen automatically while the customer makes the transaction using the split payment of stripe connect plugin available in our app store.

One more question - when a seller logs in to the backend and checks orders, they see ALL orders. They should only be able to see their own orders. How can this be set? I looked in permissions and do not find any way to change it.

That does not seem to be working. I created a seller and assigned a product to that seller. I created an order for that product, completed the order thru paypal sandbox. Then logged the seller into the backend and when viewing orders, that seller could see ALL orders for all other sellers for all other products. I check seller permissions, both in Sellacious and Joomla and made sure settings were for the seller to only have access tho their own items and nothing changed.

There also seems to be a problem with other sections. When the seller is logged in to the backend, they can see ALL products, ALL other sellers information, they can make changes to other sellers products, change measurement units, add special categories and more.
A seller logged in to the backend should only be able to view and edit their own records. nothing else. because these sellers may often be selling the same kinds of products, they may be competitors and should not have any access to the information of other sellers.
It seems to me this is a MAJOR drawback. Unless I am missing something, this is a deal killer for us!

Can I know which seller you're using for your testing? If you're using 'Sellacious' from the sample, yes, this user does have special permissions of admin. You can manage these permissions from its a profile in Joomla. If not, can you DM me the details of your site and I'll take a look at this myself?

my site is on a development server on my computer. You cannot access it from the outside. I changed some permissions and may have it working some better. I will work some more to implement the things i need and see if it still fits. Thanks for responding and trying to hrlp. It is appreciated

Another question. Here is the scenario:
Customer buys a product and completes sale
in transaction screen, I see the details of what would go to the seller and what is held by the store in commissions etc.
When the customer requests to withdraw their funds, I can't find a way to give that to them. The withdrawal completes as a "Direct Debit". Where does the seller setup their method of payment? If my funds are held in my PayPal account for the store, do I have to manually send money to the seller or is there a way to setup the transaction to pay the seller from the sellacious backend.
documentation is sorely lacking in detailing this.

After approving the withdrawal for seller's part of the money, yes, you need to pay them manually through Pay Pal.

Does your stripe addon handle this directly to the seller?
Stripe connect allows you to split it on the fly.

If you want on click withdrawal using normal paypal or stripe will consume apx 14-20 hours of customisation and achievable.

Can you provide more details on Stripe Connect? The selection in app store has no information
